- 4 eggs
- 2 cups sugar
- 1 1/2 cups oil
- 2 cups flour
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 2 cups grated carrots (I put the carrots through the juicer and then mix them back again)
- 1 (8 1/2 oz) can crushed pineapple - drained
- you may add chopped nuts if you like - about 1/2 cup
Bake at 350˚ for 50-60 minutes or till cake is ready.
